Case in point number one million: Carbone. It’s the undeniably Vegas-leaning iteration of the legendary Greenwich Village Italian spot, and it’s now open at Aria. (Here’s the slideshow part, and this is the menu part.)
Now, then. Let’s go over a few key points…
The food here is essentially the same as New York City’s. So you can still enjoy their famous lobster fra diavolo, veal parmesan or chicken scarpariello. You were concerned about the scarpariello.
There are two main rooms. The Blue Room houses a vintage mahogany bar, walls composed of New York subway station tiles and Rat Pack–era flooring. The Red Room, inspired by the Milan opera, has a floor-to-ceiling chandelier originally commissioned for a Ferrari showroom. The Yellow Room doesn’t exist, but would go well with the primary colors theme.
They have a vintage rum cart. Expect it to roll by your table after dinner carrying some of the rarest rums in the world.
The servers are clad in custom-designed burgundy tuxedos. Carbone calls them “captains.”
