Description

Word is, you’re accepting applications for your next great Vegas dining experience.

Little strange, but we’ll go with it…

And kindly introduce you to the one and only Mr Chow—a new-to-Vegas restaurant that’s bringing elevated Beijing-centric food and champagne trolleys to an indoor/outdoor space in Caesars Palace. It’s open now for walk-ins and currently accepting reservations for Saturday.

Now, if you will, please take a moment to peruse Mr Chow’s résumé.

Experience: Six locations, from London to New York, and 46 years of experience hand-pulling savory Chinese noodles.

Design: From a private elevator off the casino floor, you’ll stroll into a modern 180-seat dining room with a suspended kinetic centerpiece unlike anything you’ve seen in Vegas. And you’ve seen Cirque du Soleil.

Slideshow: This is that.

Skills: Crafting lychee-essence champagne drinks for you and a lovely date; preparing family-style Beijing duck; making green prawns; making green prawns not nearly as gross as mentioning the color green maybe made them sound just then.

Other: A champagne trolley that ensures you’re imbibing bubbly from the moment you step inside. And yes, it’s precisely what you think a champagne trolley would be.

Confession: we wrote Mr Chow’s résumé.
