And now, he’s teamed up with the crew from Ijji Sushi to bring you all manner of fish from Tokyo’s oldest fish company, gilded with, among other things of beauty, a house blend of aged soy sauce flavored with kelp. When you settle into your seat at the hinoki-cypress-topped sushi bar, lovely companion at your side, take comfort in knowing that your meal will likely start with uni from Hokkaido and likely be paired with a nice, dry sake.
