1) You’ll say the words “Follow me to Kinjo, an inviting sushi sanctuary helmed by an omakase legend that’s now open on Polk.”
2) Things will just sort of fall into place and go remarkably well from there.
It’s true. Because you’re about to enter the domain of chef Takatoshi Toshi. He’s spent the last 10 years wielding his knives at Sushi Ran, where he earned a Michelin star and, oh yeah, won first place in the US Global Sushi Challenge. He’s good at fish, is what we’re saying.
And now, he’s teamed up with the crew from Ijji Sushi to bring you all manner of fish from Tokyo’s oldest fish company, gilded with, among other things of beauty, a house blend of aged soy sauce flavored with kelp.
When you settle into your seat at the hinoki-cypress-topped sushi bar, lovely companion at your side, take comfort in knowing that your meal will likely start with uni from Hokkaido and likely be paired with a nice, dry sake.
From there, everything’s going to snowball out of control in the best way possible. Sit back and let it happen. Pretend it’s a sushi action movie starring you if that helps.
