A.M. Southampton

What: A 4,000-square-foot party palace in what was the 1Oak space that will see you dancing to celebrity DJing and lounging with bottles of carbonated alcohol.

When: Into the wee hours.

MONTAUK

Arbor

What: A sexy Mediterranean spot from the Duryea’s owner. Think grilled merguez, fresh clams and a lot of wine.

When: Dates.

SOUTHAMPTON

Jue Lan Club Southampton

What: The oxtail bao buns and shrimp crystal dumplings you’ve enjoyed at the Limelight spot, plus a much breezier vibe, lobster nights, a club called Elm & Main and a barn with a street art exhibition.

When: You want all the stuff you want to do in one place.

WATER MILL

The Greenwich

What: A quaint spot in the old Red Stixs space for crudo, wine and lobster broils, with cocktails from the Mulberry Project guys.

When: Outdoor dining is a necessity.

SOUTHAMPTON

Union Cantina

What: An entire menu of deconstructed enchiladas, another for quesadillas and three bars with more than 100 tequilas.

When: You like your Hamptons Mexican spots farm-to-table and open year-round.
