And now, Parigo, a new date-friendly restaurant that started with wine, then built its dishes to be paired specifically with that. It’s now open in the Marina from the team behind Barrel Room, and here’s the slideshow.

You’ll walk into the former Bin 38 space, noticing the clean lines and minimalist décor meant to keep the focus on the—oh thank God, they kept the fire pit. Where were we? Never mind.

Fire pit-related anxiety assuaged, it’ll be time to get down to business. Mainly, the business of enjoying their specially paired menu, which we’ve broken down for you thusly…

Each dish comes with four wine pairings: a compliment and contrast that were the inspirations for the dish, plus another set of compliment and contrast pairings that the beverage director/owner carefully chose later.

So you’ll grab something like the salmon tartar with smoked fromage blanc, fried capers and pickled red onion. Then you’ll decide whether to pair it with a complementary Chenin Blanc that’ll highlight all those flavors, or a contrasting Clos du Tue-Bouef Touraine that’ll bring out its gamey aspects.

Pro tip: they offer all wines by the half-glass, too, in case you want to try all pairings.
