Because this is about Arrogant Swine, a massive temple of Carolina-style pork and beer and whiskey
from the guy behind the Hog Days of Summer pop-up, opening tomorrow in Bushwick. (See the slideshow here.)
Call up a bunch of friends, pull up some bench, and then know this stuff:
—They’re literally doing whole hog barbecue. You can get it in chunks by the half pound or by the plate
with that perfect vinegary Carolina sauce and apple-mustard slaw.
—Smoked meats are also on the table. Spareribs, a giant turkey leg and rings of sausage. (See the full menu here.)
—You’re drinking with your pork. Twenty rotating drafts and a bunch of whiskey.
—You’re drinking with your pork outside. You’ve got 3,000 square feet of prime Bushwick beer garden
out back. Soak up every last degree.
—If you show up on Thursday, you may cross paths with a man operating a machine-powered needle. Don’t
mind him. He’s just giving out tattoos of hogs.
Think of it as pulled pork with a side of regret.
