Because on Monday, it’s all medicinal whiskey and chocolate-covered foie gras inside a 19th-century Chicago landmark.
At Steadfast, a new place to eat interesting things and drink rare whiskeys at the Kimpton Gray Hotel. It looks like this and, yes, it opens Monday.
“Humble” is a word you should strike from your vocabulary/consciousness while dining here. There are simply too many nice things: Benjamin Schiller’s aged Pappy Van Winkle Manhattans; housemade lavender pretzel bread lathered in saffron butter; the fact that you could be enjoying that stuff at a white marble table near a light fixture that lit things during the 1880s; the fact that that’s a fact.
And when dinner begins, forget it. The chefs won’t rest until your table is covered in plates of chorizo-stuffed chicken, wood-roasted suckling pig and Egyptian-spiced mussels. If you’ve managed to secure a chef’s table in back, they’ll actually deliver it themselves. Hence that name.
On your way out, you’ll be quite outrageously satisfied. Still. You might want to pause and take a look inside their charcuterie room…
