We thought this needed to exist, if only for the sake of wordplay. So we asked our pal Charlie Palmer to
create it, and he came through for us. For you, really. For the final day of 2015, because that’s when
champagne toasts are supposed to happen.
This is not a humble, “let’s just take it easy this year” New Year’s dish. It’s toasted brioche,
stuffed with lobster salad, topped with golden osetra caviar and surrounded by a champagne sabayon. It’s
served to you on a marble slab, with the requisite glass of champagne.
