Every once in a while, something really terrible happens in the world.
This is one of those times that’s the opposite of that.
For it is Sol, a pint-size refuge of Spanish seafood in the English basement beneath the Bourgeois
Pig. And it’s open now.
Basically what you’re looking at is a sushi bar and a wine bar and the coziest date
spot you’re likely to see in the neighborhood, all rolled into one. But Mediterranean instead of
Japanese.
Ravi DeRossi (of Death + Co, Proletariat, Mayahuel and, oh, right, Bourgeois Pig) and a former Noma chef are
behind this flagrant attempt to help you completely and overwhelmingly win over your prandial companion with
arctic char tartare (Dr. Seuss did, in fact, name this) and fried sunchokes and a bottle of
Spanish red.
The whole thing is made of one long bar spanning the perimeter, so you’ll be sitting next to each other,
on stools. No choice there. The walls are made of grass and the sun mosaic on the floor is made of
marble.
And you are made of billions of molecules jonesing for ceviche.
