Today, meet Rider, a slightly vegetable-centered bi-level beauty for eating before heading off to your various late-into-the-night Williamsburg activities. She opens tomorrow with a Beard winner in tow. You’re right in the Output/Verboten/Baby’s All Right triangle here, and in the very building that houses National Sawdust, the newish nonprofit concert/art installation spot (we know) in the neighborhood. And that matters. So here are the times you’ll want this at your disposal. Pre-dancing/show dinner. Rug-cutting burns calories, and so you need some calories to burn. We recommend, in order, the following: —Oyster ricotta toast with pancetta (see the menu) —Steak tartare with artichoke leaves —Pork schnitzel with herbs, pickles, marinated vegetables and foie rouille —Chocolate-rosemary cake with caramel–Earl Grey ice cream (damn) and cocoa nibs (This slideshow contains the majority of those things.) Pre-dancing/show drinks. Never hurts to be a little lubricated either. For that, there’s the Koala Infestation cocktail—Jamaican rum, pisco, Thai basil, curaçao, peanut, lime, pineapple and an Easter Island mug. A nice, relaxing brunch. This hasn’t launched yet, but when it does, you need to pull up one of the stools at the panoramic first-floor window. Witness the majestic gazelle consumer making its weekly migration from the Bedford L stop to Flea/Smorgasburg in search of mid-century Danish credenzas and the city’s buzziest hand-shucked corn. Nature, right?
